G is for Grilling – Week 1 (Part 3)

Let’s top off that grilled Flank Steak and Ahi Tuna with some delicious Chimichurri Sauce, and you’re set!

Chimichurri Sauce:
1/2 cup olive oil
2 tablespoons red wine vinegar (RED WINE IS THE KEY)
1/2 cup finely chopped parsley
3-4 cloves garlic , finely chopped or minced
Juice of one lemon
1/2 cup finely chopped cilantro (if you don’t like cilantro, ok to omit)
1/4 cup chopped red onion or shallot
salt and pepper to taste

Blend above finely in a food processor, and top your protein. Recommended sided dishes may be hearty potato dish, roasted broccoli or summer squash, or pasta or bread.
